Baking Tip: If you want an even deeper coconut flavor, try lightly toasting your flaked coconut in a dry skillet over medium heat for 2–3 minutes before folding it into the dough. Just let it cool down first so it doesn’t melt your chocolate chips!

Instructions

Step 1:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

Step 2:
Beat in the egg and coconut extract, mixing well until the wet ingredients are completely combined.

Step 3:
In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, blending just until a cohesive dough forms.

Step 4:
Gently stir in the semisweet chocolate chips and flaked coconut, making sure they are evenly distributed throughout the dough.

Step 5:
Drop the dough by rounded tablespoonfuls onto ungreased baking sheets, leaving about 2 inches of space between each cookie.

Step 6:
Bake at 375°F for 11 to 13 minutes or until the edges turn a beautiful golden brown.

Step 7:
Remove the cookies from the oven and transfer them to wire racks to cool completely.
