Ingredients
For the Muffins:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
1 cup white sugar
2 eggs
1 1/4 tsp vanilla extract
1 1/2 cups fresh apples, finely chopped (like Granny Smith or Honeycrisp)
For the Strudel Topping:
1/3 cup packed brown sugar
1 tbsp all-purpose flour
1/8 tsp ground cinnamon
1 tbsp cold butter

Baking Tip: When prepping your apples, aim for a small, uniform dice (about the size of a blueberry). If the pieces are too large, they will sink to the bottom of the muffin cups and cause the muffins to break apart when you try to remove them from the pan. Keeping the pieces small ensures you get a perfect burst of apple in every single bite!
Instructions
Step 1.
Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin pan well, or line it with paper baking cups.
Step 2.
In a medium bowl, whisk together the 2 cups of flour, baking powder, baking soda, and salt. Set this dry mixture aside.
Step 3.
In a large bowl, beat together the 1/2 cup of softened butter, white sugar, and eggs until the mixture is completely smooth and creamy. Stir in the vanilla extract. Fold in the chopped apples, then gradually stir in the flour mixture just until combined.
Step 4.
Spoon the thick batter evenly into the 12 prepared muffin cups, filling them mostly to the top.
Step 5.
In a small bowl, mix the brown sugar, 1 tablespoon of flour, and cinnamon. Cut in the 1 tablespoon of cold butter using a fork or your fingers until the mixture resembles coarse crumbs. Sprinkle this strudel topping generously over the batter in each muffin cup.
Step 6.
Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins sit in the pan for 5 minutes before removing them to cool completely on a wire rack.
